Prepare Sambhariyu with 1 medium fresh coconut,1 bunch fresh coriander, 100gm fresh garlic, 5 to 10 green chillies, 50 gm fresh ginger, 10 to 15 gm fresh amba haldi, Hathi Chilli Powder, Hathi Coriander Powder, Hathi Undhiya Masala, 1/2 tbsp soda bicarbonate, sugar/salt to taste. In a heavy bottomed vessel, put 2 cups oil, add 1 glass of water. Make the first layer of brinjals, potatoes, Yam (Suran/kandh) and sweet potato. Sprinkle some sambhariyu on top, Now add remaining vegetables and add samabhariyu, put the vessel on medium heat for about 10-15 minutes, Once the vegetables start cooking, add the muthias to vegetable while keeping on simmer, Allow to cook for about 1/2 hour on low flame,You are ready to serve the undhiya with hot puris.
